INGREDIENTS

Scallops: 8

Breadcrumbs: 15 g

Dry white wine: 1 tablespoon

Extra virgin olive oil: to taste

Parsley: to taste

Thyme: to taste

Salt: to taste

Pepper: to taste

METHOD

Open the scallops, clean them and rinse them with cold running water. Dry them by placing them face down on a piece of kitchen roll.

Next, prepare the crust. In a bowl, mix the breadcrumbs with the parsley, thyme, salt, pepper and dry white wine.

Take the scallops and put them on an oven tray with their shells at the bottom. Top them with the breadcrumb mix and drizzle some extra virgin olive oil on all of them.

Cook them in a preheated fan oven at 190°C for approximately 15 minutes.

Take them out and garnish them with fresh parsley leaves.

The scallops are now ready to be served.
