After a soft pressing, the must ferments in steel tanks at a controlled temperature on selected yeasts for 15 days. Second fermentation by Charmat method in stainless steel with selected yeasts for about three months.
Pale straw yellow with greenish hues with fine and persistent perlage. Elegant aroma with hints of sage, thyme and mint.
Ideal as an aperitif and with light appetizers; extremely versatile with savory seafood dishes, mixed fried fish and vegetables.
