The wine is made on the skins, with a maceration period lasting 15 days at a controlled temperature of 26°C to 28°C. Following the primary fermentation stage, malolactic fermentation commences. The wine is then left to age with fine sediment in stainless steel vats until the spring.
It is a deep ruby red colour with violet hues. There is a decidedly fruity fragrance, with prominent notes of ripe cherries, raspberries, blueberries and blackberries. Boasting great structure and acidity, it has an untamed flavour that is counterbalanced by the softness of the tannins.
It is ideal with flavoursome rice and pasta dishes, vegetable soups, roasts, game and medium cheeses.
